When I create a character, I tend to start with how he thinks, although sometimes I just have a "cool idea" that I design around. Character's designed around their mental process usually end up having personality disorders. This is for a few reasons.
1) Although usually not a direct correlation, characters whom I've endeavored to create as "normal" seem to end up in RPs that just die. Sort of a bad association that discourages it for me.
2) I enjoy playing as strange people.
3) If I have a character who thinks in a weird way, I have to justify it, which often helps me write my history.
Take Upsilon (a character that I will use in this RP). He's kind of a cool idea/weird mind hybrid. I liked the idea of multiple bodies sharing one mind, but wanted the mind itself to be relatively human. Maybe some weird mannerisms, but human. Most "hive minds" I see tend to be very insectoid, so I wanted to be different there.
This lead to his race, rather than his history, which lead me to ask "why is he unique as a Credo?" Which created his history. Then I simply designed his mind as a somewhat "child-like" adult (in theory anyway), as a result of his history. He trusts people, is always trying to examine his environment, etc.
Wow, I kind of ranted there...

Since we're all talking about our creative process here, I'll throw mine in xD.
Most of my ideas come from various books I've read. I have quite the affinity for medieval fantasy books, as well as RPs. I will usually pick an archetype that I've seen in books before and then put my own twist on it. My character for this RP actually started as a human. I wanted to create that "jolly knight" archetype. A joyful, almost childish mind in a gargantuan body covered in massive plate mail. When I came to the part of deciding his height I remembered the 7'0 tall minotaur that is being played here. I really wanted to have the physically biggest character in the RP (I'm competitive ;D) and so the idea dawned on me to make him a giant, or descendant of giants rather. From there I just started typing and it all came to mind. I played around with letters in my head for the race. (I've had quite a bit of experience with coming up with words of a fantastic nature. In my 1x1 with Saga I came up with all the words of power in that RP and actually have a list on my computer so that I could maintain somewhat of an actual language, expanding as I went, following english syntax).
/end rant

well... Shadow has been a year in the making. first i made his appearence, then i made his history, figuring that i needed a Nuetral balance to all life(for my books im working on) in all universes(including parallels). then his history expanded to make me figure his powers, being the original creator of life, and the creator of Death himself. then the metaphorical death after exile, the the deal with Death, which mutated the powers, making him infinitly powerful in the name of love... then came the

Shadow Realm... then i needed a balance to that so i created Nwura as that balance(about... 2 months ago). then i made her his wife... and before that i had the idea of the sentient blades, The Mortals were first... then the udødelig(norweigan for immortal), then the Auctoritas(latin for power)
still working on him...

The only character I've had last a year was used in just one RP. And yes, that RP lasted for a whole year. The only one that I've really ever come close to finishing. it was also my first RP. It's funny to look back and see how bad I was when I first started (One liners everywhere, and quite a few grammar/spelling mistakes). I've learned a lot since then, and I'm using a descendant (or clone) of that character type in another RP in the same forum. The RP died about 2 years ago, but a friend and I got together and we're bringing the family back together to the RP. Already got 4 guys in on it. And as for the tall characters, yes, half my characters are big dudes. In fact, those characters I was just talking about were about 6'6" tall humans who's main armament were machine guns and other heavy weapons. Tough guys too, were really hard to knock down, part of their skill sets

Shadow is 7' and the reason i am still working on him is the trillions of years of history...

Heh, indeed.
It took me a while to decide between Garis and Balan for my character. I ended up going with Balan because of it's ruler. That and Balan was more likely to take a minotaur in and treat him as one of their own than the other kingdoms, particularly Aiesnter. I've always loved the neutral point of view, and sometimes they can pull off the greatest feats and accomplishments.
